Discovering Toko Ramen in Nostalgic Kiyosumi-Shirakawa

Located in Koto Ward, Tokyo, Kiyosumi-Shirakawa is a charming neighborhood where historic downtown traditions blend harmoniously with modern cafe culture. A popular destination for leisurely strolls and cafe-hopping, this neighborhood is also home to Toko Ramen, a shop serving a comforting bowl you could easily enjoy every day.

Having heard great things from local ramen fans, I was genuinely excited to visit. Gazing up at the storefront sign with high expectations, I opted for their Shoyu Ramen Set. When the tray arrived, it held a vibrant bowl of ramen paired with a mini rice bowl generously topped with fragrant meat, instantly waking up my appetite.

Zero Gaminess and Refreshingly Light: A Flavor-Packed Tonkotsu-Shoyu Broth

I started by scooping up a warm spoonful of soup with the renge spoon. The moment it hit my palate, a rich wave of umami gently spread across my mouth, almost making me gasp in delight.

This soup is slowly simmered over many hours using pork bones, pork trotters, chicken carcasses, and aromatic vegetables. Hearing "tonkotsu" (pork bone broth) might make some people expect a heavy funk or an oily layer, but the soup at Toko Ramen exhibits zero gamey odor or greasy heaviness.

With only a modest touch of back fat, the broth feels light and clean on the palate. At the same time, the deep, rounded savoriness drawn from the ingredients lingers pleasantly on your tongue. It is neither overwhelmingly rich nor underwhelmingly thin—truly an ideal version of a light pork bone broth that keeps you coming back daily.

Smooth, Medium-Thin Straight Noodles That Complement the Broth

Paired with this well-balanced broth are beautiful medium-thin straight noodles. Lifting them with chopsticks and taking a slurp, they slide down smoothly with an effortless, pleasant throat feel.

The noodles have a supple texture, clinging to just the right amount of soup as they travel to your mouth. The combination of this light yet deeply layered broth and the gentle aroma of wheat from the noodles is spot-on. Enhancing one another's best qualities, they create an easy rhythm that keeps you slurping until the bowl is empty.

A Labor of Love: Fragrant, Melt-in-Your-Mouth Seared Chashu

The standout element of this bowl is undoubtedly the shop's famous thick-cut chashu (braised pork). From the moment the dish arrives, an appetizing, savory aroma drifts upward.

This pork undergoes a meticulous multi-step process involving par-frying, simmering, and marinating. Just before it is placed on the bowl, it is seared on a hot flat-top griddle until juicy. The pork is so tender from the slow braise that it gently falls apart under the slight pressure of chopsticks.

Take a bite, and the meltingly soft meat releases a burst of savory sweetness from the special sauce caramelized by the sear, alongside rich, juicy pork flavor. The delicate balance of sweet fat and savory glaze leaves a deeply satisfying aftertaste with every bite. It is an impressive centerpiece that any ramen lover should experience at least once.

A Satisfying Shoyu Ramen Set and a Moment in Kiyosumi-Shirakawa

Beyond the signature chashu, the supporting toppings also hold their own. Crisp menma (seasoned bamboo shoots), nori (dried seaweed) meant for dipping into the broth, vibrant scallions, and an egg are all arranged with care, keeping the experience engaging to the final bite.

On top of that, the accompanying small rice bowl comes loaded with finely diced, succulent chashu piled over warm rice. The rice soaked in savory sauce pairs seamlessly with the aromatic pork, and enjoying it alongside sips of the clean, rich ramen broth makes the meal even more rewarding.

Getting such a complete Shoyu Ramen Set for just ¥880 feels like exceptional value. Whether you are walking through Kiyosumi-Shirakawa, stopping by for lunch during work, or taking a break from cafe-hopping on the weekend, this is a thoroughly satisfying stop to keep in mind.
